Stay in sleeping bags and tents. There is a cook who will put up your tents and cook all the meals. Basic camping safaris use 3-person dome tents with mosquito tenting. Campgrounds have communal toilets and showers (sometimes with hot water). There is a "clubhouse" where you dine, and sometimes there is evening entertainment. It can get quite chilly on the Ngorongoro Crater rim. Sometimes the campgrounds are crowded and dirty.
